Tout comme la vigne, l\u2019olivier fait parti du paysage languedocien depuis de nombreux si\u00e8cles. On retrouve des \u00e9crits datant du X\u00e8me si\u00e8cle, dans lesquels on apprend que l\u2019archev\u00eaque de Narbonne venait d\u00e9j\u00e0 sur la colline de Monte-Olerio pour produire son huile.\u00a0En occitan, Monte Olerio signifie le mont des oliviers.<\/p>\n

Aujourd\u2019hui, le village s\u2019appelle Montouliers, et on retrouve des traces d\u2019olivettes (petit champs plant\u00e9 d\u2019oliviers) sur la colline sur laquelle il est construit. L\u2019oliveraie fait aujourd\u2019hui 15 hectares, avec environ 4000 arbres plant\u00e9s.\u00a0Nous avons redonn\u00e9 vie \u00e0 des oliviers \u00ab\u00a0fatigu\u00e9s\u00a0\u00bb qui ne produisaient plus, et avons \u00e9galement plant\u00e9 de jeunes oliviers, en pratiquant une culture raisonn\u00e9e des vari\u00e9t\u00e9s ancestrales de la r\u00e9gion\u00a0: Lucques<\/strong>, Picholines<\/strong>, Olivi\u00e8res<\/strong> et Verdales de l\u2019Herault<\/strong>.\u00a0<\/span><\/p>\n

A l\u2019heure actuelle les vari\u00e9t\u00e9s en production les plus importantes sont l\u2019Olivi\u00e8re, la vari\u00e9t\u00e9 la plus typique de la r\u00e9gion et la plus r\u00e9sistante, ainsi que la Lucques, \u00a0destin\u00e9e \u00e0 la confiserie en olives de bouche pour les plus grosses, laissant les plus petits calibres pour l\u2019huile.<\/p>\n

Nous avons \u00e9galement plant\u00e9 des vari\u00e9t\u00e9s \u00ab\u00a0secondaires\u00a0\u00bb moins pr\u00e9sentes dans la r\u00e9gion historiquement, mais qui, par leur composition, am\u00e8nent des propri\u00e9t\u00e9s \u00e0 la fois m\u00e9dicinales mais aussi gustatives. Ainsi, l\u2019oliveraie compte des parcelles de Cayon<\/strong>, Aglandau<\/strong>, Amellau<\/strong>, et une vari\u00e9t\u00e9 espagnole\u00a0: la Gordal Sevillana<\/strong>.<\/p>\n
